Frugal Eating

So, the last few weeks, I have been purchasing a Bountiful Basket. In which every week, you spend $15 for a basket of fruit AND a basket of veggies. Enough to feed a family of four for a week. And I've been getting one of my own! In other words, I have had a lot of fruit going bad... so, I've been trying to find ways to use it up as quickly as possible. This week, I had a ton of bananas and apricots, so I decided to make Apricot Banana Bread.

Following my family's Banana Bread recipe:

Sift Together:   3 1/2 Cups Flour
                         1 1/2 tsp Baking Soda
                         2 1/2 tsp Cream of Tartar
                         1 tsp Salt
Cream:             2/3 Cups Shortening ( I use applesauce instead)
                         1 1/3 Cup Sugar
Add:                 4 Eggs, well beaten
                         2 Cups Mashed Bananas
Add Optional 1 Cup Chopped Nuts

Instead of adding the nuts to one of the pans, I chose to add apricots. So, I pitted them...

Then, I diced them...

And then... diced them the other way.

Some of them were quite mushy, so they were great for the bread! Then, I added it to the bread batter.

Then, I used a spatula to blend the mush in...

And then... DUH DUH DUH. :)
Bake in the oven at 350 Degrees for 1 hour! And you'll have a gorgeous loaf of moist, delicious bread.

Believe me... I've been eating this like crazy!! <3 So good!
